What would I need to do to convert the above recipe for baking in a 10-inch cast iron pan?
A recipe that yields 12 regular-sized muffins is enough use a 8-9″ pan or even a 10″ skillet. But the cornbread batter in that size skillet will be thinner and bake faster, so start testing it for doneness 8-10 minutes before the minimum baking time recommended in the muffin recipe.
