Turkey roasting methods, which is best? I tried baking a turkey in a Roasting Pan with the rack open. He did not come out as juicy as I wanted. I remember my parents always using a roasing pan with a lid and the turkey was still juicy, some of them drop the bone, but very juicy. I also heard from the kitchen it breast side down, and others. What is the best way? Should I use a saucepan with a lid or not?
Use the pan with the lid while the first half of cooking and remove the second half. You can do this with aluminum foil if you do not cover. I cook the mine breast down and return it. Butter under the skin of the breast also helps
