What is the Best Cookware on the market? Cast iron, stainless steel, copper, enamel …?
So many choices. Copper heats up quickly, but the cast iron holds heat better. Stainless steel cleans easily. I usually stay away from aluminum, What type of cookware do you prefer? If your choice is cast, please indicate whether or enameled cast iron "seasoned" cast (as Grandma). Thank you.
I am a gourmet home cook.I worked in a restaurant and I worked selling cookware.I find the MOST is versitle Caphalon.Even Caphalon has much better best.The are made from extruded anodised alluminum. (Not cast) and the surface is blasted, silver.Then then coated, Teflon is mixed with silver and applied to the surface.This is the finest cookware non-stick. Copper nice but takes heat temp. changes slowly and needs to be polished to maintain its brilliancy.All-plated is good, it is stainless steel with a minium "dressed" (Sandwich) on stainless steel and bottom.Alluminum warming is not fast reation to tomato sauces. Cast iron is an dinosour.It take long to heat, but retain heat better than any metal.It periodiclly.You must be experienced can also "blacken" the fish and other meats in a font can pan.You not jump "or blacken a nonstick skillet! It emits a gas that is dangerous. Personally, I have a gear at all (except copper) One type is not flexible to cover all modes of cooking. I use my Caphlon for eggs, pancakes, crepes, omlettes.I use my cast iron ect to blacken fish, bacon searing.I and use my All-Clad for foods with sauces that I need to use a metal spoon or spatula to turn my foods.Use untensels Only if you use non-stick cooking spray.
