Baking dough rolled in a glass pie dish?
I bought a 9 "pie plate glass made by Pyrex because I want to try my hand at making a home from scratch, pie. Do I need to adjust the oven temperature accordingly? Or Should I go buy a metal pie plate instead?
Personally, I use a glass pie dish for recipes that call for pre-baking the crust as I sometimes had "wet" crust when cooked in a "first" paste. Make sure to prick the crust all over (once in the pan) and add pie weights to the bottom. For recipes that call for baking cake batter into a raw, I prefer to use a terracotta dish. They conduct heat much more thoroughly and I had better luck with this type of pan and dough raw. Personally, I do not use metal pie plates. I do not like the "tinny" taste that can come from them and knife to scratch the surface when I 'm cutting the cake.
