Professional chefs: Is low copper utensils pair better with a cooking surface of aluminum or stainless steel?
We just received a triple layers (copper bottom Gourmet Standard, aluminum core, stainless steel surface) together. I read that aluminum is the best surface because it is curable. Is this true? And if so, is it worth considering? We hope this is all we can develop with the cooks. If aluminum is the best choice … Thank you!
Cooktops aluminum are anodized aluminum, which means that aluminum was a chemical bath, which in fact strone than steel. Calphalon One is an example of the stainless cooking surfaces. Are usually preferred by chefs because a) it is unreactive with acidic foods like tomato sauce b) non-porous and easy to clean and c) stainless steel surfaces are lighter than aluminum anodized black, which makes it easier to see the "bottom" developing in the bottom of the pan. The bin you received is of the highest quality and the type used by best chefs in the world. If you want a pan curable get some cast iron pieces. They are very cheap and perfect conductors of heat. Cuisine a well-stocked stainless, cast iron, and nonstick pieces. The right tool for every job.
