They say aluminum Cookware can’t be cook with acidic food. so with Calphalon Hard-anodized aluminum can I?
Can I cook Tomato base (spatgetti sauce)? What are the limitation?
Yes — the anodized coating protects the pan from acidic foods and vice versa. Cook what you will. But I have learned that there is one limitation of some anodized Aluminum Pans, and that is that they do not do well over very high heat, such as you really must have when browning or sauteeing. As a result, I have switched to other pans for those needs.
