What type of cookware is the best?

I love to cook all sauces, soups, stews, cakes, candy, almost anything under the sun. I have a great set of revereware we received for our wedding .. 8 years ago. Lately I've become very frustrated with the hot food to the bottom of my pots (EN LOW HEAT) And it's driving me crazy! I made chili, which simmer for two hours, and a disc of food burned on the bottom of my pan .. EWW .. so I need some heavy Pots And Pans for cooking manage my desires (My plan is to start cooking some French soon). What is heavy (but not cast iron) is difficult to burn, ideal for pop in the oven, and a decent price?

I've been slowly replacing my "wedding kitchen" with All-Clad. Stainless steel are heavy and expensive, but I love them. Each year I have a new piece with gift cards received at Christmas.
