Does anyone know how to make fortune cookies?
I need a recipe, some help on any special cookware that’s required, and help on technique.
I haven’t made these for years! You DO have to be quick, and you can only make a few at a time–but you really don’t need much in the way of special tools. Fortune Cookies non-stick cooking spray 5 TB butter 4 large egg whites 1 cup superfine sugar 1 cup flour, sifted pinch of salt 3 TB heavy cream 1 tsp. almond extract Heat oven to 400. Spray Cookie Sheet with spray. Melt butter in small saucepan, set aside. Combine egg whites & sugar in small bowl, beat on med. speed for 30 seconds. Add flour & salt, beat until combined. Add butter, heavy cream & almond extract, beat until combined, about 30 seconds. Pour 1 TB of batter on baking sheet, spread into a thin 5” circle with the back of a spoon. Repeat on other half of sheet. Bake until edges of the cookie are brown, about 8 minutes. Remove to heat resistant surface. Working as quickly as possible, slide a spatula under the first cookie & place on a clean kitchen towel. Fold into a semi-circle, slide a finger in & fold into shape. Once the cookie hardens, which happens almost immediately, you can’t fold it. Repeat with the second cookie. Stagger the cookies, baking, by 4 minutes, so you can shape. When they’re all cool, thread the fortunes through.
